Pumpkin Mashed Potatoes

- 1 1/3 cups potato flakes
- 2 tablespoons butter
- ¼ teaspoon sea salt
- 1/3 cup water
- 1 cup coconut milk
- ¼ teaspoon garlic powder
- ½ cup pumpkin
- Bring water to a boil in a small pot. Add the seasonings then stir in the potato flakes.
- Remove from heat and stir in the coconut milk.
- Next stir in the pumpkin.
This will keep in the refrigerator for about five days and in the freezer for several months.
