Pumpkin Mashed Potatoes

I think one of the best comfort foods is mashed potatoes.  Adding pumpkin takes the comforting texture and flavor to a whole new level.  This is a healthy side dish or topping.

Coconut milk adds more fat but it's a beneficial fatty acid chain called Lauric acid. When dogs synthesize Lauric acid it produces something called monoglyceride monolaurin which helps fight and destroy viruses and various pathogenic bacteria protecting your pets from infection and boosting their immune systems.  It also elevates metabolism and boosts energy by helping to regulate the thyroid helping overweight dogs lose weight and helping sedentary dogs feel energetic.

  • 1 1/3 cups potato flakes
  • 2 tablespoons butter
  • ¼ teaspoon sea salt
  • 1/3 cup water
  • 1 cup coconut milk
  • ¼ teaspoon garlic powder
  • ½ cup pumpkin


  1. Bring water to a boil in a small pot. Add the seasonings then stir in the potato flakes.
  2. Remove from heat and stir in the coconut milk.
  3. Next stir in the pumpkin.

This will keep in the refrigerator for about five days and in the freezer for several months.
