Banana Carob Pupcakes

These tasty little bites of goodness will satisfy your dog's sweet tooth without being overly sweet. Kirby prefers savory over sweet so I usually make these in mini muffin tins. I really couldn't tell if he had a preference for frosted or plain and none of the other dogs seemed too picky. They're perfect by themselves or frost them up for a special occasion. Either way pups will be happy you baked!

Ingredients

  • 3 medium bananas
  • 1/4 cup plain greek yogurt
  • 1/2 cup applesauce
  • 1 egg
  • 3 tablespoons coconut oil
  • 2 teaspoons vanilla
  • 1 1/2 cups whole wheat flour
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1/2 cup carob chips

Directions

  1. In a bowl stir together the wet ingredients.
  2. In another bowl combine the dry ingredients and add to the wet ingredients stirring just until combined.
  3. Fold in the carob chips.
  4. Divide the batter evenly between 12 greased muffin cups.
  5. Bake at 350 degrees for 10 - 15 minutes for mini muffins or 20 - 25 minutes for regular size muffins. They are done when a toothpick inserted in the center comes out clean.
  6. Remove from the oven and cool for 5 minutes before gently removing and placing on a cooling rack until completely cool.

  7. These will last in an airtight container at room temperature for 4-5 days.
