Arroz Con Pollo is spanish for "rice with chicken". The classic recipe calls for white rice, roma tomatoes, and several spices. This is my standard super easy "Kirby" version which is good for when your dog may be ailing. It's one of my go-to recipes for new fosters to help strengthen their weak immune systems and start adjusting their bodies to good nutrition.
Sometimes I boil some chicken breasts but this recipe is a great way to use left over chicken - baked, grilled, or roasted. Just make sure there weren't a lot of seasonings used. White rice is perfectly ok but brown rice is much healthier. Also, you can add more stock to the final dish if you want, or need, more liquid.
Sometimes I add finely diced roma tomatoes fresh from my garden but most of the time I just puree leftover veggies. I stock baby food (fruits, veggies, and meats) in my pantry for when I need to add some flavorful moisture to one of Kirby's meals. There are so many veggies to choose from - just make sure they are dog safe.

- 2 cups cooked chicken
- 2 cups cooked brown rice
- 2 1/2 cups chicken stock
- 2 - 3.5 oz natural sweet potatoesbaby food
- 2 teaspoons parsley
- 1/4 teaspoon ground egg shell
- Boil the chicken breasts. Discard the skin and bones. Shred the meat.
- Cook the rice using a ratio of 2 1/2 cups chicken stock to 1 cup rice so the rice gets to the point of mush since a dog's body has a harder time digesting grains. If you don't have any chicken stock use the water you boiled the chicken in.
- Thoroughly mix together. Let cool and serve
